Somethings Cooking At Laura Nelle's Edition 3 Laura Nelle's Fruit Pudding
Simple and fast 1 med. can of crushed pineapple 1 package (4-serving) Jell-O instant pudding-Coconut cream flavor 1 cup thawed Cool Whip non-dairy whipped topping Combine pudding mix and pineapple, with syrup, in bowl. Blend in whipped topping. Garnish with cherry on top. Chill. Makes 6 custard cups. Can be eaten now but I like mine chilled. Russian Tea 1 1/2 C Tang, 3/4 C Tea, 2 Pkgs Lemonade mic (3oz.), 2 C Sugar, 2 tsp. Cinnamon, 2 tsp. cloves Mix together. Set aside. I like this in the winter months. Put a couple spoonfuls in a cup and pour boiling water over it. Stir and enjoy.
Laura Nelle's Baked Beans
2 med. size cans of Campbell's Pork and Beans 1 med. onion diced 1/2 large green pepper chopped 1 T. mustard 3/4 C light brown sugar 4 lg. squirts of catsup Mix all ingredients together in 9x13 baking dish and top with 3 -4 slices of bacon.
Bake 1 hr. at 400 degrees.
Mamie Eisenhower Fudge
4 1/2 C. sugar 12 oz. pkg. simi sweet chocolate bits 1 lg. can evaporated milk 16 oz. pkg. German chocolate 2 T. butter dash if salt 1 pint marshmellow 2 C. nutmeats In a deep pan combine sugar, milk, butter and salt and bring to a boil. Boil six minutes. In a lg. mixing bowl combine all other ingredients and pour syrup over all. Beat until all chocolate is melted. Pour into a large pan and let set several hrs. before cutting.
"Note" I've had this recipe since back in the 60's. It makes a lot. Don't cut in big pieces. It's very rich and goes a long way for the Holidays. Microwave Fudge
1 C cocoa 2 sticks margarine
2 lbs. 10X sugar 1/2 to 1 C chopped nuts (optional)
1/2 homogenized milk 2 tsp. vanilla Do not stir any of the ingredients in the first step. Sift cocoa and sugar in a lg. mixing bowl. Add milk and lay margarine sticks on top. Do not stir. Cook on High for 6 minutes. Remove from microwave and stir thoroughly. Add vanilla flavoring and nuts. Stir until well mixed. Pour into buttered platter. Cool in refrigerator for 1 hr. Cut and serve. Do not double this recipe. Apricot Jello Salad Drain 1-20 oz can of crushed pineapple. Put pineapple aside. Prepare 2 packages of apricot jello and include the pineapple juice as part of the liquid.Let the jello get to the stage before firmness.Add the drained pineapple, 1 cup of chopped pecans and 2 carrots shredded. Keep in Ref. till it gets firm and serve. Everyone at my home loves this salad anytime of the year. Check next month for something new cooking at my home.
